Marinated Grilled Fish & Veggie Kebabs
Ingredients
600 grams firm fish fillets (such as snapper), cut into chunks
1 courgette, sliced into rounds or chunks
1 red capsicum, cut into chunks
1 red onion, cut into wedges
1/4 cup olive oil
3 tablespoons soy sauce
2 tablespoons lemon juice
2 cloves garlic, minced
1 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon dried oregano
Salt and pepper, to taste
Lemon wedges and fresh parsley (for garnish)
Instructions
1. Prepare the Marinade
In a bowl, whisk together the olive oil, soy sauce, lemon juice, minced garlic, paprika, ground cumin, dried oregano, salt, and pepper to create the marinade.
2. Marinate the Fish and Veggies
Place the fish chunks in a shallow dish or a resealable plastic bag.
Pour half of the prepared marinade over the fish, ensuring all pieces are coated evenly. Cover the dish or seal the bag and refrigerate.
Place the sliced courgette, capsicum chunks, and red onion wedges in another bowl. Toss them with the remaining marinade to coat the vegetables evenly. Let them marinate alongside the fish for at least 30 minutes.
3. Skewer the Fish and Veggies
Preheat your BBQ or grill to medium-high heat. Thread the marinated fish chunks, courgette, capsicum, and onion onto the wooden skewers, alternating between fish and veggies.
4. Grill the Skewers
Lightly oil the grill grates. Place the skewers on the preheated grill. Grill for about 3-4 minutes on each side or until the fish is cooked through and the vegetables are tender-crisp, brushing occasionally with any leftover marinade.
5. Serve and Garnish
Carefully remove the skewers from the grill and transfer them to a serving platter.
Garnish with fresh parsley and serve the grilled fish and veggie skewers hot with lemon wedges on the side.
